Health and Wellness Tips

Lansing USD469 is proud to promote health & wellness to our students and staff. In addition to having a Health & Wellness Committee that meets quarterly, Lansing Middle School has a student Health and Wellness Advisory Committee - Kids Version in their Peer Leadership group, led by teacher and coach Jennifer Bishop. 

In addition to serving on the district Health & Wellness Committee, these students will be sharing health tips monthly:

Tip:

Increase fruit and vegetable intake

Aim for at least 5 servings of fruits and vegetables daily

 

Recipe

 Chicken Tacos

 Ingredients:

  • Chicken thigh or breast

  • Olive oil, lime juice, garlic, sea salt, cumin and chili powder

  • Tortillas

  • Any desired toppings

 

Instructions:

Whisk together olive oil, lime juice, garlic, chili powder, salt and cumin in a small bowl.

Pour mixture over chicken thighs and let marinate for 15-30 minutes. You can marinate the chicken longer if you want

Grill chicken thighs using an indoor or outdoor grill or cook the chicken on the stovetop in a cast iron skillet over medium-high heat for 10-12 minutes, flipping halfway, until cooked throughout (internal temperature should be 170-175°F). Once cooked, pull chicken from heat and let rest for 3-5 minutes.

Dice chicken thighs into cubes. Place chicken into a warm taco shell and add toppings of choice.
